Grate the potatoes, zucchini, and eggplant. Place the grated vegetables in a fine-mesh sieve or wrap in a clean kitchen towel and squeeze out as much liquid as possible. This is key for crispy fritters!
In a large bowl, combine the squeezed grated vegetables, eggs, flour, minced garlic, salt, and pepper. If using, stir in the dried herbs now.
Mix everything together until well combined. The mixture should hold together but not be too wet.
Heat the cooking oil in a large non-stick pan over medium heat.
Spoon dollops of the mixture into the hot pan, flattening slightly with the back of a spoon to form patties about 1-2 cm thick. Cook for 3-5 minutes per side, or until golden brown and cooked through.
Remove fritters from the pan and place on a plate lined with paper towel to drain excess oil.
Serve hot, perhaps with a dollop of plain yogurt or sour cream if desired.
💡 Pro Tips:
- 🔥 Make sure your pan is properly heated but not too hot, or your fritters might burn on the outside before cooking through.
- 🥄 Don't crowd the pan! Cook fritters in batches for the best results – they'll cook more evenly.
- 🌶️ For a tiny kick, add a pinch of chili flakes to the mixture! (If you like a little heat! 😉)
