
Heat oil in a large pan or pot over medium-high heat.
Add the sliced sausages and cook, stirring occasionally, until browned on all sides. Remove sausages from the pan and set aside, leaving the oil.
Add the chopped onion, carrots, and bell pepper to the pan. Cook for about 5-7 minutes, stirring, until slightly softened.
Stir in the diced potatoes. If using, add the tomato paste and dried herbs and cook for another minute, stirring.
Add about 1/2 cup (120ml) of water, salt, and pepper. Bring to a simmer, then reduce heat, cover, and cook for 10-15 minutes, or until potatoes are tender.
Return the cooked sausages to the pan. Stir in the drained beans and chopped pickled cucumbers. Cook for another 5 minutes, uncovered, allowing the flavors to meld and the liquid to reduce slightly.
Taste and adjust salt and pepper if needed. Serve hot and enjoy your amazing mash-up!
