Gradually whisk in the milk, a little at a time, until the sauce is smooth and thickened. Bring to a gentle simmer.
Remove the sauce from the heat. Stir in most of the grated melting cheese (save some for topping) and half of the crumbled feta until melted and smooth. Season with salt and pepper.
In a large bowl, gently combine the cooked pasta, drained tuna, the cheese sauce, and any optional ingredients like sundried tomatoes or olives.
Pour the mixture into a baking dish. Sprinkle the remaining grated melting cheese and the rest of the crumbled feta over the top.
Bake for 20-25 minutes, or until bubbly and golden brown on top.
Let it stand for a few minutes before serving. Garnish with fresh herbs if using.
