Place chopped carrots and potatoes in a pot and cover with cold water.
Bring to a boil and cook until both are tender when pierced with a fork, about 15-20 minutes.
Drain the water completely.
Return the pot to low heat for a minute to dry out the vegetables slightly, stirring constantly.
Add milk, salt, and pepper to the pot. If using optional garlic or dried herbs, add them now.
Mash the carrots and potatoes with a potato masher until smooth or desired consistency is reached.
Taste and adjust seasoning if needed.
Serve the warm mash alongside or on a bed of the fresh lettuce leaves.
💡 Pro Tips:
- 🍲 This mash is wonderfully versatile! Serve it hot as a comforting side, or let it cool slightly and serve it more like a salad.
- 🔥 For a little extra oomph without breaking the bank, sauté a tiny bit of onion or a pinch of dried herbs (like dill or parsley) before mashing!
- 🥣 Got a little bit of leftover cheese? A sprinkle on top makes it extra yummy!
